Description

Ingredients

  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, chilled and cubed
  • 2 tablespoons granulated sugar
  • 3 to 4 tablespoons ice water
  • 1 cup honey
  • 1/2 cup heavy cream
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon sea salt
  • 1 tablespoon cornstarch

Instructions

  1. Preheat your oven to 350°F.
  2. In a mixing bowl, combine the flour and salt.
  3. Add the chilled butter and sugar, and mix until the mixture resembles coarse crumbs.
  4. Gradually add ice water, one tablespoon at a time, mixing until the dough holds together.
  5. Shape the dough into a disk, wrap in plastic wrap, and refrigerate for at least 30 minutes.
  6. Roll out the dough on a floured surface to fit a 9-inch pie pan.
  7. Transfer the dough to the pan, trim the edges, and poke holes in the bottom with a fork.
  8. Pre-bake the crust for 15 minutes, then remove from the oven and let it cool slightly.
  9. In a large bowl, whisk together the honey, heavy cream, eggs, vanilla extract, sea salt, and cornstarch until smooth.
  10. Pour the filling into the pre-baked crust.
  11. Bake for 35-40 minutes, or until the filling is set and slightly puffed.
  12. Allow the pie to cool to room temperature, then refrigerate for at least 2 hours before serving.
