- 2 cups cooked chicken, shredded
- 2 cups mixed vegetables (carrots, peas, corn)
- 1 cup cooked rice
- 1 can (10.5 ounces) cream of chicken soup
- 1 cup shredded cheddar cheese
- 1/2 cup milk
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon black pepper
- 1/2 teaspoon salt
- 1/2 cup breadcrumbs (optional for topping)
- 2 tablespoons olive oil (if using breadcrumbs)
Instructions
- Preheat the oven to 350°F (175°C).
- In a large mixing bowl, combine the shredded chicken, mixed vegetables, cooked rice, cream of chicken soup, milk, garlic powder, onion powder, black pepper, and salt. Stir until well combined.
- Transfer the mixture into a greased 9×13 inch baking dish, spreading it evenly.
- If using breadcrumbs, mix them with olive oil in a small bowl until coated. Sprinkle the breadcrumb mixture evenly over the casserole.
- Top the casserole with shredded cheddar cheese.
- Bake in the preheated oven for 25-30 minutes, or until the cheese is bubbly and golden brown.
- Remove from the oven and let it cool for 5-10 minutes before serving.
Notes
- For a healthier option, substitute brown rice for white rice and use low-fat cream of chicken soup.
- Add your favorite herbs, such as thyme or rosemary, for extra flavor.
- You can also mix in some cooked bacon or sausage for a heartier dish.
