Ingredients

  • 1/2 cup milk
  • 1 cup diced bell peppers (any color)
  • 1 cup chopped spinach
  • 1/2 cup diced onion
  • 1 cup shredded cheese (cheddar or your choice)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon paprika
  • Cooking spray or oil for greasing the muffin tin

Instructions

  1. Preheat the oven to 350°F. Grease a muffin tin with cooking spray or oil.
  2. In a large mixing bowl, whisk together the eggs and milk until well combined.
  3. Add the diced bell peppers, chopped spinach, diced onion, shredded cheese, salt, black pepper, garlic powder, and paprika to the egg mixture. Stir until all ingredients are evenly distributed.
  4. Pour the egg mixture into the prepared muffin tin, filling each cup about 3/4 full.
  5. Bake in the preheated oven for 18-20 minutes, or until the muffins are set and lightly golden on top.
  6. Remove from the oven and let cool for a few minutes before carefully removing the muffins from the tin. Serve warm or allow to cool completely and store in an airtight container in the refrigerator.
