- 4 pounds whole chicken, cleaned and patted dry
- 1/4 cup olive oil
- 1 tablespoon garlic powder
- 1 tablespoon onion powder
- 1 tablespoon dried thyme
- 1 tablespoon dried rosemary
- 1 tablespoon dried oregano
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 lemon, halved
- 4 cloves garlic, smashed
- Fresh herbs (optional, for garnish)
Instructions
- Preheat your oven to 425°F (220°C).
- In a small bowl, mix together the olive oil, garlic powder, onion powder, thyme, rosemary, oregano, salt, and black pepper to create a herb paste.
- Rub the herb paste all over the chicken, making sure to get under the skin for maximum flavor.
- Stuff the cavity of the chicken with the halved lemon and smashed garlic cloves.
- Place the chicken breast-side up in a roasting pan or cast-iron skillet.
- Roast the chicken in the preheated oven for about 1 hour and 15 minutes, or until the internal temperature reaches 165°F (75°C) and the juices run clear.
- Let the chicken rest for 10-15 minutes before carving.
- Serve garnished with fresh herbs if desired.
Notes
- For a crispy skin, you can broil the chicken for the last 5 minutes of cooking.
- If you prefer a different flavor, try adding smoked paprika or lemon zest to the herb paste for a unique twist.
