- 1/2 cup panko breadcrumbs

- 2 cloves garlic, finely minced
- 1 large egg

- 1/2 teaspoon freshly ground black pepper
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 1/4 teaspoon cayenne pepper (optional)
- 1/4 cup buttermilk
- 1 tablespoon avocado oil (for frying)
Instructions
- Preheat your oven to 400°F (200°C) and prepare a baking tray with parchment paper.
- In a mixing bowl, combine ground turkey, panko breadcrumbs, Pecorino Romano cheese, chopped basil, minced garlic, egg, sea salt, black pepper, thyme, rosemary, and cayenne pepper if desired.
- Gently fold in the buttermilk until just blended, avoiding overmixing.
- Shape the mixture into small balls, roughly the size of a golf ball, and arrange them on the prepared baking sheet.
- Lightly coat the meatballs with avocado oil.
- Bake in the oven for 20-25 minutes, or until the internal temperature reaches 165°F (74°C).
Notes
- For extra flavor, add finely chopped olives or roasted red peppers to the mixture.
- To lighten the dish, swap half of the ground turkey for ground bison or a plant-based alternative.
