A refreshing seafood pasta salad perfect for summer gatherings.

- 8 ounces rotini pasta
- 1 cup cooked shrimp, peeled and deveined
- 1 cup cooked crab meat, shredded
- 1 cup cherry tomatoes, halved
- 1/2 cup diced cucumber
- 1/4 cup red onion, finely chopped
- 1/4 cup black olives, sliced
- 1/2 cup mayonnaise
- 1/4 cup sour cream
- 1 tablespoon lemon juice
- 1 teaspoon garlic powder
- 1 teaspoon dried dill
- Salt and pepper to taste
Instructions
- Cook the rotini pasta according to package instructions until al dente. Drain and rinse under cold water to cool.
- In a large mixing bowl, combine the cooked pasta, shrimp, crab meat, cherry tomatoes, cucumber, red onion, and black olives.
- In a separate bowl, whisk together the mayonnaise, sour cream, lemon juice, garlic powder, dried dill, salt, and pepper until smooth.
- Pour the dressing over the pasta and seafood mixture. Gently toss until everything is well coated.
- Cover the bowl with plastic wrap and refrigerate for at least 1 hour to allow the flavors to meld.
- Before serving, give the salad a gentle stir and adjust seasoning if necessary.
Notes
- For a lighter version, substitute Greek yogurt for half of the mayonnaise.
- Add diced bell peppers or fresh herbs like parsley or basil for extra flavor and color.
