A refreshing seafood pasta salad perfect for summer gatherings.


Ingredients

  • 8 ounces rotini pasta
  • 1 cup cooked shrimp, peeled and deveined
  • 1 cup cooked crab meat, shredded
  • 1 cup cherry tomatoes, halved
  • 1/2 cup diced cucumber
  • 1/4 cup red onion, finely chopped
  • 1/4 cup black olives, sliced
  • 1/2 cup mayonnaise
  • 1/4 cup sour cream
  • 1 tablespoon lemon juice
  • 1 teaspoon garlic powder
  • 1 teaspoon dried dill
  • Salt and pepper to taste

Instructions

  1. Cook the rotini pasta according to package instructions until al dente. Drain and rinse under cold water to cool.
  2. In a large mixing bowl, combine the cooked pasta, shrimp, crab meat, cherry tomatoes, cucumber, red onion, and black olives.
  3. In a separate bowl, whisk together the mayonnaise, sour cream, lemon juice, garlic powder, dried dill, salt, and pepper until smooth.
  4. Pour the dressing over the pasta and seafood mixture. Gently toss until everything is well coated.
  5. Cover the bowl with plastic wrap and refrigerate for at least 1 hour to allow the flavors to meld.
  6. Before serving, give the salad a gentle stir and adjust seasoning if necessary.

Notes

  • For a lighter version, substitute Greek yogurt for half of the mayonnaise.
