Ingredients

  • 2 cups buttermilk biscuit mix
  • 2/3 cup milk
  • 1 pound breakfast sausage (bulk or casings removed)
  • 1/4 cup chopped onion
  • 1/4 cup all-purpose flour
  • 2 cups milk (for gravy)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon salt
  • 1 cup shredded cheddar cheese
  • 2 large eggs

Instructions

  1. Preheat your oven to 350°F. Grease a 9×13-inch baking dish.
  2. In a large bowl, combine the biscuit mix and 2/3 cup of milk. Stir until just combined. Spread the mixture evenly in the bottom of the prepared baking dish.
  3. In a skillet over medium heat, cook the breakfast sausage and chopped onion until the sausage is browned and cooked through, about 5-7 minutes. Drain excess fat if necessary.
  4. Sprinkle the flour over the cooked sausage and onion, stirring to coat. Gradually add 2 cups of milk, stirring constantly until the mixture thickens, about 3-5 minutes. Add garlic powder, onion powder, black pepper, and salt. Mix well.
  5. Pour the sausage gravy over the biscuit layer in the baking dish. In a small bowl, whisk together the eggs and pour them evenly over the casserole.
  6. Sprinkle the shredded cheddar cheese on top. Bake in the preheated oven for 30-35 minutes, or until the casserole is set and the cheese is bubbly.
  7. Let it cool for a few minutes before slicing and serving.

Notes

  • For a spicier kick, add a pinch of red pepper flakes to the sausage while cooking.
  • You can substitute the breakfast sausage with turkey sausage or a plant-based alternative for a lighter version.
