Description
A delicious and healthy Southwest Chicken Cobb Salad topped with a zesty Chipotle Lime Dressing.
Ingredients

- 2 cups cooked chicken, diced
- 4 cups romaine lettuce, chopped
- 1 cup cherry tomatoes, halved
- 1 avocado, diced
- 1 cup black beans, rinsed and drained
- 1 cup corn (canned or frozen, thawed)
- 1/2 cup crumbled feta cheese
- 1/4 cup red onion, thinly sliced
- 1/4 cup fresh cilantro, chopped
- 1/4 cup olive oil (for dressing)
- 2 tablespoons lime juice (freshly squeezed, for dressing)
- 1 tablespoon honey (for dressing)
- 1 teaspoon chipotle powder (for dressing)
- 1/2 teaspoon garlic powder (for dressing)
- Salt and pepper to taste (for dressing)
Instructions
- In a large bowl, combine the chopped romaine lettuce, diced chicken, cherry tomatoes, avocado, black beans, corn, feta cheese, red onion, and cilantro. Toss gently to mix all ingredients evenly.
- In a separate small bowl, whisk together the olive oil, lime juice, honey, chipotle powder, garlic powder, salt, and pepper until well combined.
- Drizzle the dressing over the salad and toss gently to coat all ingredients with the dressing.
- Serve immediately or chill in the refrigerator for about 30 minutes to allow the flavors to meld.
Notes
- For added crunch, sprinkle some tortilla strips on top before serving.
- To make it vegetarian, substitute the chicken with grilled tofu or additional beans.
