Ingredients

- 1 cup cucumber, diced
- 1/4 cup red onion, finely chopped

- 1 jalapeño pepper, seeded and minced
- 2 tablespoons lime juice

- 1 teaspoon honey (optional)
- Salt and pepper to taste
Instructions
- In a large mixing bowl, combine the cubed watermelon, diced cucumber, chopped red onion, cilantro, and minced jalapeño.
- In a small bowl, whisk together the lime juice, olive oil, honey (if using), salt, and pepper.
- Pour the dressing over the watermelon mixture and gently toss to combine.
- Let the salad sit for about 10 minutes to allow the flavors to meld.
- Serve chilled or at room temperature.
Notes
- For added crunch, consider adding 1/4 cup of crumbled feta cheese or goat cheese.
- Substitute the jalapeño with a pinch of cayenne pepper for a different heat level, or omit it entirely for a milder salad.
