Description

A delicious and elegant stuffed chicken roulade filled with a creamy mixture of spinach and cheese, perfect for a special dinner.


Ingredients

  • 2 large boneless, skinless chicken breasts (about 1 pound total)
  • 1 cup fresh spinach, chopped
  • 1 cup mozzarella cheese, shredded
  • 1/2 cup cream cheese, softened
  • 1/4 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon olive oil
  • 1 teaspoon Italian seasoning
  • 1/2 cup breadcrumbs (optional, for topping)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Place the chicken breasts between two sheets of plastic wrap and pound them to an even thickness of about 1/2 inch using a meat mallet or rolling pin.
  3. In a mixing bowl, combine the chopped spinach, mozzarella cheese, cream cheese, Parmesan cheese, garlic powder, onion powder, salt, and black pepper. Mix until well combined.
  4. Lay the pounded chicken breasts flat on a clean surface. Spread the cheese and spinach mixture evenly over each chicken breast, leaving a small border around the edges.
  5. Carefully roll each chicken breast tightly from one end to the other, securing the filling inside. Use toothpicks to hold the roulades together if necessary.
  6. Heat the olive oil in a large oven-safe skillet over medium heat. Add the chicken roulades and sear them for about 3-4 minutes on each side until golden brown.
  7. If using breadcrumbs, sprinkle them on top of the chicken roulades. Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C).
  8. Remove from the oven and let the chicken rest for 5 minutes before slicing. Serve warm.

Notes

  • For added flavor, marinate the chicken in your favorite dressing for 30 minutes before preparing.
  • Substitute the spinach with other greens like kale or Swiss chard, or add sun-dried tomatoes for a different flavor profile.
