- 2 large boneless, skinless chicken breasts (about 1 pound total)
- 1 cup fresh spinach, chopped
- 1 cup mozzarella cheese, shredded
- 1/2 cup cream cheese, softened
- 1/4 cup grated Parmesan cheese
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon olive oil
- 1 teaspoon Italian seasoning
- 1/2 cup breadcrumbs (optional, for topping)
Instructions
- Preheat your oven to 375°F (190°C).
- Place the chicken breasts between two sheets of plastic wrap and pound them to an even thickness of about 1/2 inch using a meat mallet or rolling pin.
- In a mixing bowl, combine the chopped spinach, mozzarella cheese, cream cheese, Parmesan cheese, garlic powder, onion powder, salt, and black pepper. Mix until well combined.
- Lay the pounded chicken breasts flat on a clean surface. Spread the cheese and spinach mixture evenly over each chicken breast, leaving a small border around the edges.
- Carefully roll each chicken breast tightly from one end to the other, securing the filling inside. Use toothpicks to hold the roulades together if necessary.
- Heat the olive oil in a large oven-safe skillet over medium heat. Add the chicken roulades and sear them for about 3-4 minutes on each side until golden brown.
- If using breadcrumbs, sprinkle them on top of the chicken roulades. Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C).
- Remove from the oven and let the chicken rest for 5 minutes before slicing. Serve warm.
Notes
- For added flavor, marinate the chicken in your favorite dressing for 30 minutes before preparing.
- Substitute the spinach with other greens like kale or Swiss chard, or add sun-dried tomatoes for a different flavor profile.
