Sweet Chili Rotisserie Chicken Bowls are a delicious and easy meal featuring shredded rotisserie chicken, colorful vegetables, and a sweet chili sauce served over brown rice.

- 2 cups cooked brown rice
- 1 rotisserie chicken, shredded
- 1 cup sweet chili sauce
- 1 cup broccoli florets
- 1 cup bell peppers, sliced (any color)
- 1 cup shredded carrots
- 2 green onions, sliced
- 1 tablespoon sesame oil
- Salt and pepper to taste
- 1 tablespoon sesame seeds (optional)
Instructions
- In a large skillet, heat sesame oil over medium heat. Add broccoli, bell peppers, and shredded carrots. Sauté for about 5-7 minutes until vegetables are tender-crisp. Season with salt and pepper to taste.
- While the vegetables are cooking, shred the rotisserie chicken and mix it with the sweet chili sauce in a separate bowl.
- Once the vegetables are cooked, reduce the heat to low and add the sweet chili chicken mixture to the skillet. Stir until everything is heated through, about 3-4 minutes.
- To serve, place 1/2 cup of cooked brown rice in each bowl. Top with the sweet chili chicken and vegetable mixture.
- Garnish with sliced green onions and sesame seeds if desired.
Notes
- For a spicier kick, add a teaspoon of sriracha or red pepper flakes to the sweet chili sauce.
- Substitute quinoa or cauliflower rice for brown rice for a lower-carb option.
