Sweet Chili Rotisserie Chicken Bowls are a delicious and easy meal featuring shredded rotisserie chicken, colorful vegetables, and a sweet chili sauce served over brown rice.


Ingredients

  • 2 cups cooked brown rice
  • 1 rotisserie chicken, shredded
  • 1 cup sweet chili sauce
  • 1 cup broccoli florets
  • 1 cup bell peppers, sliced (any color)
  • 1 cup shredded carrots
  • 2 green onions, sliced
  • 1 tablespoon sesame oil
  • Salt and pepper to taste
  • 1 tablespoon sesame seeds (optional)

Instructions

  1. In a large skillet, heat sesame oil over medium heat. Add broccoli, bell peppers, and shredded carrots. Sauté for about 5-7 minutes until vegetables are tender-crisp. Season with salt and pepper to taste.
  2. While the vegetables are cooking, shred the rotisserie chicken and mix it with the sweet chili sauce in a separate bowl.
  3. Once the vegetables are cooked, reduce the heat to low and add the sweet chili chicken mixture to the skillet. Stir until everything is heated through, about 3-4 minutes.
  4. To serve, place 1/2 cup of cooked brown rice in each bowl. Top with the sweet chili chicken and vegetable mixture.
  5. Garnish with sliced green onions and sesame seeds if desired.

Notes

  • For a spicier kick, add a teaspoon of sriracha or red pepper flakes to the sweet chili sauce.
  • Substitute quinoa or cauliflower rice for brown rice for a lower-carb option.
