  • 1/2 cup bell pepper (any color), diced
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup olive oil
  • 1/4 cup apple cider vinegar
  • 1 tablespoon Dijon mustard
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Combine Ingredients: In a large bowl, mix kidney beans, chickpeas, green beans, red onion, bell pepper, and parsley.

  2. Make Dressing: Whisk together olive oil, apple cider vinegar, Dijon mustard, garlic powder, salt, and black pepper in a small bowl.

  3. Toss Salad: Pour the dressing over the bean mixture and gently toss to coat.
