A refreshing Mediterranean-inspired salad featuring cheese tortellini and a variety of fresh vegetables, perfect for a light meal or side dish.


Ingredients

  • 8 ounces cheese tortellini
  • 1 cup halved cherry tomatoes
  • 1 cup diced cucumber
  • 1/2 cup diced yellow bell pepper
  • 1/4 cup finely chopped red onion
  • 1/2 cup sliced Kalamata olives
  • 1/2 cup halved bocconcini (small mozzarella balls)
  • 1/4 cup chopped fresh parsley
  • 1/4 cup extra virgin olive oil
  • 2 tablespoons balsamic vinegar
  • 1 teaspoon dried oregano
  • Salt and freshly ground black pepper to taste

Instructions

  1. Boil the cheese tortellini according to the instructions on the package.
  2. Once cooked, drain and rinse under cold water to stop the cooking process, then set aside to cool completely.
  3. In a large bowl, mix together the halved cherry tomatoes, diced cucumber, yellow bell pepper, red onion, Kalamata olives, bocconcini, and fresh parsley.
  4. In a separate bowl, combine the extra virgin olive oil, balsamic vinegar, dried oregano, and a pinch of salt and pepper, whisking until well blended.
  5. Gently fold the cooled tortellini into the vegetable mixture, then drizzle the dressing over everything.
  6. Toss carefully to ensure all ingredients are coated.
  7. Cover the bowl with plastic wrap and let it chill in the refrigerator for at least 30 minutes to enhance the flavors.
  8. Serve the salad cold or at room temperature.
