- 8 ounces cheese tortellini
- 1 cup halved cherry tomatoes
- 1 cup diced cucumber
- 1/2 cup diced yellow bell pepper
- 1/4 cup finely chopped red onion
- 1/2 cup sliced Kalamata olives
- 1/2 cup halved bocconcini (small mozzarella balls)
- 1/4 cup chopped fresh parsley
- 1/4 cup extra virgin olive oil
- 2 tablespoons balsamic vinegar
- 1 teaspoon dried oregano
- Salt and freshly ground black pepper to taste
Instructions
- Boil the cheese tortellini according to the instructions on the package.
- Once cooked, drain and rinse under cold water to stop the cooking process, then set aside to cool completely.
- In a large bowl, mix together the halved cherry tomatoes, diced cucumber, yellow bell pepper, red onion, Kalamata olives, bocconcini, and fresh parsley.
- In a separate bowl, combine the extra virgin olive oil, balsamic vinegar, dried oregano, and a pinch of salt and pepper, whisking until well blended.
- Gently fold the cooled tortellini into the vegetable mixture, then drizzle the dressing over everything.
- Toss carefully to ensure all ingredients are coated.
- Cover the bowl with plastic wrap and let it chill in the refrigerator for at least 30 minutes to enhance the flavors.
- Serve the salad cold or at room temperature.
