- 4 ounces sliced turkey breast
- 2 ounces goat cheese, softened
- 2 tablespoons fruit jam (such as fig or raspberry)
- 1 cup fresh spinach leaves

Instructions
- Begin by toasting the whole grain bread slices until golden brown.
- In a small bowl, mix the softened goat cheese with a pinch of salt and pepper until well combined.
- Spread the goat cheese mixture evenly on one side of each toasted bread slice.
- On one slice of bread, layer the sliced turkey breast, followed by the fresh spinach leaves.
- Spread the fruit jam over the turkey and spinach.
- Top with the second slice of bread, goat cheese side down, to create a sandwich.
- Heat the olive oil in a skillet over medium heat. Once hot, place the sandwich in the skillet and cook for about 3-4 minutes on each side, or until the bread is crispy and golden and the cheese is slightly melted.
- Remove from the skillet, slice in half, and serve immediately.
Notes
- For a lighter version, use low-fat turkey and reduced-fat goat cheese.
- You can also add sliced avocado for extra creaminess and healthy fats.
- If you prefer a crunch, add sliced cucumbers or bell peppers inside the sandwich.
