- 1 cup fresh arugula or spinach

Instructions
- Start by toasting the slices of whole grain bread until golden brown.
- In a small bowl, mix the softened goat cheese with a pinch of salt and pepper for added flavor.
- Spread the goat cheese evenly on one side of each slice of toasted bread.
- On one slice of bread, layer the sliced turkey breast, followed by the arugula or spinach.
- Spread the fruit jam over the turkey and greens.
- Place the second slice of bread on top, goat cheese side down, to complete the sandwich.
- If desired, drizzle olive oil over the sandwich and cut it in half for easier handling.
