Ingredients

  • 4 ounces sliced turkey breast
  • 2 ounces goat cheese, softened
  • 2 tablespoons fruit jam (such as fig or raspberry)
  • 1 cup fresh arugula or spinach
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. Start by toasting the slices of whole grain bread until golden brown.
  2. In a small bowl, mix the softened goat cheese with a pinch of salt and pepper for added flavor.
  3. Spread the goat cheese evenly on one side of each slice of toasted bread.
  4. On one slice of bread, layer the sliced turkey breast, followed by the arugula or spinach.
  5. Spread the fruit jam over the turkey and greens.
  6. Place the second slice of bread on top, goat cheese side down, to complete the sandwich.
  7. If desired, drizzle olive oil over the sandwich and cut it in half for easier handling.
