A refreshing and delicious Watermelon Mojito Mocktail perfect for hot days.
Ingredients

- 4 cups seedless watermelon, cubed
- 1/4 cup fresh mint leaves, plus extra for garnish
- 1/4 cup fresh lime juice (about 2 limes)
- 2 tablespoons honey or agave syrup (adjust to taste)
- 2 cups sparkling water
- Ice cubes
- Lime wedges for garnish
Instructions
- In a blender, puree the watermelon cubes until smooth. Strain the puree through a fine mesh sieve into a large pitcher to remove any pulp, if desired.
- Add the fresh mint leaves, lime juice, and honey or agave syrup to the watermelon juice. Use a muddler or the back of a spoon to gently press the mint leaves to release their flavor.
- Stir in the sparkling water until well combined. Taste and adjust sweetness if necessary.
- Fill glasses with ice cubes and pour the watermelon mojito mixture over the ice. Garnish with additional mint leaves and lime wedges.
- Serve immediately and enjoy!
