- In a mixing bowl, combine ground almonds, sugar, egg whites, honey, almond extract, and all-purpose flour. Mix until a cohesive dough forms, around 3-5 minutes.
- Preheat your oven to 170°C (338°F) and line two baking sheets with parchment paper.
- Roll the dough into 20 balls and coat them in icing sugar.
- Form thumbprints by pressing into the center of each ball.
- Bake for about 12 minutes until golden around the edges.
- Allow cookies to cool before filling with approximately ½ teaspoon of jam.
