  • 2 cups Raspberry Fresh or frozen
  • 1 cup Sugar Adjust for sweetness
  • 1 cup Water
Ladyfingers
  • 24 pieces Ladyfingers Dip quickly in syrup
Mascarpone Filling
  • 16 ounces Mascarpone Cheese Cream cheese can be a substitute
  • 3/4 cup Heavy Cream Whip to stiff peaks
  • 3/4 cup Sugar Adjust to taste
  • 1 teaspoon Vanilla Extract Use pure vanilla
Garnish
  • 1 ounce White Chocolate Grated

Method
 

Preparation Steps
  1. In a saucepan over medium heat, combine raspberries, sugar, and water. Simmer for about 10 minutes until syrupy. Remove from heat and cool.
  2. In a mixing bowl, combine mascarpone cheese, heavy cream, sugar, and vanilla extract. Beat on medium speed until smooth and creamy.
  3. Quickly dip ladyfingers into the cooled raspberry syrup, then arrange them in a square dish.
  4. Spread half of the mascarpone filling over the ladyfingers, then sprinkle with grated white chocolate.
  5. Repeat the layers with another batch of dipped ladyfingers and remaining mascarpone filling.
  6. Cover and refrigerate for at least 6 hours, preferably overnight.
