- In a large mixing bowl, combine the coleslaw mix, rinsed black beans, sweet corn kernels, diced jalapeño, chopped red bell pepper, sliced green onions, and fresh cilantro. Toss everything together gently until evenly mixed.
- In a separate bowl, whisk together the sour cream, mayonnaise, freshly squeezed lime juice, and chipotle sauce until smooth and creamy.
- Pour the creamy dressing over the salad mixture and fold gently using a spatula. Add the taco seasoning and ground cumin.
- Reserve a handful of Chili Cheese Fritos and mix the remaining crunchy chips into the salad.
- Transfer the Frito Cowboy Cabbage to a serving dish. Sprinkle reserved Fritos on top just before serving.
