  • 1 large Egg A flax egg can be used for egg-free.
  • 1/2 cup Chopped Onion Shallots can be substituted for a milder flavor.
  • 1 teaspoon Dried Oregano
  • 1 teaspoon Dried Basil
  • 1 teaspoon Salt
  • 1/2 teaspoon Pepper

Step-by-Step Instructions
  1. Preheat the oven to 375°F (190°C) and prepare a baking sheet by greasing it or lining it with parchment paper.
  2. In a large mixing bowl, combine ground chicken, gluten-free breadcrumbs, grated parmesan cheese, minced garlic, egg, chopped onion, dried oregano, dried basil, salt, and pepper. Mix until just combined.
  3. Divide the mixture into four equal portions and shape each portion into an oval loaf. Place on the prepared baking sheet.
  4. Bake for 20-25 minutes until internal temperature reaches 165°F (74°C) and exterior is lightly golden.
  5. Let the meatloaves rest for a few minutes before serving to allow juices to redistribute.
