Preheat your oven to 350°F (175°C).
In a large mixing bowl, combine the ground turkey, mayonnaise, Dijon mustard, Worcestershire sauce, garlic powder, onion powder, salt, and pepper. Mix until well combined.
Form the turkey mixture into small patties, about the size of the Hawaiian rolls. You should get around 12 patties.
In a skillet over medium heat, cook the turkey patties for about 4-5 minutes on each side, or until they are fully cooked through and reach an internal temperature of 165°F (74°C).
While the patties are cooking, slice the Hawaiian rolls in half horizontally, keeping them connected.
Place the bottom half of the rolls in a greased baking dish. Layer the cooked turkey patties on top, followed by the shredded cheddar cheese.
Place the top half of the rolls over the cheese. Brush the melted butter over the top of the rolls and sprinkle with poppy seeds if using.
Cover the baking dish with aluminum foil and bake in the preheated oven for 15 minutes. Remove the foil and bake for an additional 5-10 minutes, or until the tops are golden brown.
Remove from the oven and let cool for a few minutes. If desired, sprinkle with chopped green onions before serving.
