Making Butterscotch Lush
- Preheat your oven to 350°F (175°C). Combine crushed graham crackers and melted butter in a mixing bowl. Press the mixture into the bottom of a 9x13 inch pan. Bake for 8-10 minutes until lightly golden. Allow to cool.
- In a large mixing bowl, beat softened cream cheese until smooth. Gradually add powdered sugar and mix. Fold in half of the whipped cream. Spread over cooled crust.
- In another bowl, whisk together butterscotch pudding mix and 2 cups of milk. Whisk until thickened (3-5 minutes). Pour over cream cheese layer.
- Spread remaining whipped cream over the butterscotch layer. Use a spatula to smooth or create peaks.
- Sprinkle chocolate shavings over the whipped cream. Cover with plastic wrap and refrigerate for at least 2-4 hours to set.
