  • 1/2 cup Unsalted Butter Melted
For the Cream Cheese Layer
  • 8 oz Cream Cheese Softened
  • 1 cup Powdered Sugar
For the Butterscotch Layer
  • 1 package Butterscotch Pudding Mix Instant
  • 2 cups Milk Slightly less than package instructions
For the Whipped Cream Topping
  • 2 cups Whipped Cream Lightly whipped or store-bought
For Garnishing
  • 1/4 cup Chocolate Shavings
Optional Add-ins
  • 1 package Chocolate Pudding Mix Swap for butterscotch if desired
  • 1 package Lemon Pudding Mix Refreshing alternative

Method
 

Making Butterscotch Lush
  1. Preheat your oven to 350°F (175°C). Combine crushed graham crackers and melted butter in a mixing bowl. Press the mixture into the bottom of a 9x13 inch pan. Bake for 8-10 minutes until lightly golden. Allow to cool.
  2. In a large mixing bowl, beat softened cream cheese until smooth. Gradually add powdered sugar and mix. Fold in half of the whipped cream. Spread over cooled crust.
  3. In another bowl, whisk together butterscotch pudding mix and 2 cups of milk. Whisk until thickened (3-5 minutes). Pour over cream cheese layer.
  4. Spread remaining whipped cream over the butterscotch layer. Use a spatula to smooth or create peaks.
  5. Sprinkle chocolate shavings over the whipped cream. Cover with plastic wrap and refrigerate for at least 2-4 hours to set.
