Method
 

Step-by-Step Instructions
  1. Preheat the oven to 375°F (190°C) and grease a 9x13-inch baking dish.
  2. In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add chopped onion and minced garlic, sauté until translucent.
  3. Add chopped bell peppers and diced zucchini, cooking for an additional 7 minutes.
  4. Stir in diced tomatoes and vegetable broth, add seasonings, simmer for 5 minutes.
  5. Mix in half of the cheese till melted, then remove from heat.
  6. Pour the mixture into the baking dish, top with remaining cheese.
  7. Bake for 25-30 minutes until cheese is bubbly and golden brown.
  8. Let cool slightly, garnish with fresh basil, and serve.
