- Preheat your oven to 375°F (190°C).
- In a large skillet, heat olive oil over medium heat. Add bell peppers and onions, sauté for about 5 minutes.
- In a mixing bowl, combine ground beef, breadcrumbs, egg, milk, Worcestershire sauce, garlic powder, salt, and pepper. Mix until just combined.
- Press half of the meat mixture into the bottom of a greased loaf pan.
- Layer half of provolone cheese over the meat base, followed by the sautéed veggies.
- Top with the remaining meat mixture, sealing the filling inside.
- Bake in the preheated oven for 45–50 minutes until firm and internal temperature reaches 160°F (70°C).
- In the last 5 minutes, add the remaining provolone cheese on top until melted.
- Let the meatloaf rest for 5–10 minutes before slicing.
- Slice and serve, optionally garnished with fresh parsley.
