Ingredients
  

For the Meatloaf Base
  • 1 lb Ground Beef Blend of lean and fatty for flavor.
  • 1 cup Breadcrumbs Use gluten-free breadcrumbs for a GF version.
  • 1 Egg Acts as a binder.
  • 1/2 cup Milk Can substitute with cream or non-dairy alternative.
  • 2 tbsp Worcestershire Sauce Enhances umami.
  • 1 tsp Garlic Powder Fresh garlic can provide more robust flavor.
  • 1 tsp Salt Adjust to taste.
  • 1/2 tsp Pepper Adjust to taste.
For the Veggie Layer
  • 1 cup Green Bell Pepper Feel free to use red or yellow.
  • 1 cup Onion Sweet onions work beautifully.
  • 1 tbsp Olive Oil Used for sautéing; butter can be an alternative.
For the Cheesy Finish
  • 8 oz Provolone Cheese Swap for mozzarella or other melting cheese if desired.
For Garnish (Optional)
  • 2 tbsp Fresh Parsley Adds color and freshness.

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet, heat olive oil over medium heat. Add bell peppers and onions, sauté for about 5 minutes.
  3. In a mixing bowl, combine ground beef, breadcrumbs, egg, milk, Worcestershire sauce, garlic powder, salt, and pepper. Mix until just combined.
  4. Press half of the meat mixture into the bottom of a greased loaf pan.
  5. Layer half of provolone cheese over the meat base, followed by the sautéed veggies.
  6. Top with the remaining meat mixture, sealing the filling inside.
  7. Bake in the preheated oven for 45–50 minutes until firm and internal temperature reaches 160°F (70°C).
  8. In the last 5 minutes, add the remaining provolone cheese on top until melted.
  9. Let the meatloaf rest for 5–10 minutes before slicing.
  10. Slice and serve, optionally garnished with fresh parsley.
