- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a medium bowl, stir together graham cracker crumbs, flour, baking soda, and salt.
- In a large bowl, cream the softened butter, brown sugar, and granulated sugar until creamy. Add in the egg and vanilla extract, mixing well.
- Gradually add the dry ingredients to the wet mixture, stirring until just combined.
- Scoop about a tablespoon of dough and roll it into a ball, then roll in additional graham cracker crumbs.
