  • 2 tablespoons rice vinegar

  • 1 tablespoon cornstarch optional
Rice Base
  • 2 cups cooked jasmine rice or sushi rice
  • 1 tablespoon salt
Avocado Layer
  • 2 avocados freshly mashed
  • 1 tablespoon lime juice or lemon juice
  • 1 pinch salt and black pepper to taste
Garnishing
  • 2 tablespoons sesame seeds
  • 2 tablespoons chopped green onions

Preparation
  1. Prepare Teriyaki Sauce by whisking together soy sauce, honey, rice vinegar, sesame oil, minced garlic, and grated ginger in a bowl.
  2. In a skillet, heat sesame oil and cook the chicken until golden brown, then pour in the teriyaki sauce and simmer.
  3. In a large bowl, toss warm cooked rice with rice vinegar, sesame oil, and salt.
  4. Mash avocados with lime juice, salt, and pepper until creamy.
  5. Assemble the stacks by layering seasoned rice, mashed avocado, and teriyaki chicken.
  6. Garnish with sesame seeds, green onions, and pickled ginger, then serve.
