Ingredients
  

  • 8 ounces cheese tortellini
  • 1 cup cherry tomatoes halved
  • 1 cup cucumber diced
  • 1/2 cup red bell pepper diced
  • 1/4 cup red onion finely chopped
  • 1/2 cup black olives sliced
  • 1/4 cup fresh basil chopped
  • 1/2 cup Italian dressing
  • Salt and pepper to taste

Method
 

  1. Cook the cheese tortellini according to package instructions. Drain and rinse under cold water to cool.
  2. In a large mixing bowl, combine the cooled tortellini, cherry tomatoes, cucumber, red bell pepper, red onion, black olives, and fresh basil.
  3. Pour the Italian dressing over the salad and toss gently to combine.
  4. Season with salt and pepper to taste.
  5. Cover the salad and refrigerate for at least 30 minutes to allow the flavors to meld.
  6. Serve chilled or at room temperature.
