For the Dressing
  • 0.5 cup Sour Cream Greek yogurt can be used as a healthier alternative.
  • 0.5 cup Mayonnaise Opt for vegan mayo for a dairy-free alternative.
  • 2 tablespoons Fresh Lime Juice Bottled lime juice works if fresh is hard to find.
  • 2 tablespoons Chipotle Sauce Adjust to reach preferred heat level.
For the Crunch
  • 1 bag Chili Cheese Fritos Reserve a handful for sprinkling on top.

Preparation Steps
  1. In a large mixing bowl, combine the coleslaw mix, drained black beans, and canned corn. Add in diced jalapeño, chopped red bell pepper, sliced green onions, and fresh cilantro. Toss everything together gently until well mixed.
  2. In a separate bowl, whisk together sour cream, mayonnaise, fresh lime juice, and chipotle sauce. Blend these ingredients until you achieve a smooth and creamy consistency.
  3. Pour the prepared dressing over the vegetable mixture, ensuring all the components are generously coated. Stir gently, adding in all but a handful of the Chili Cheese Fritos.
  4. Before serving, sprinkle the reserved Fritos on top of your Frito Cowboy Cabbage. Arrange the salad in a serving bowl or platter.
