- 2 cups cooked chicken, shredded
- 1 can (15 ounces) black beans, rinsed and drained
- 1 cup corn, frozen or canned, drained
- 1 red bell pepper, diced
- 1 cup cherry tomatoes, halved
- 1 avocado, diced
- 1/4 cup red onion, finely chopped
- 1/4 cup fresh cilantro, chopped
- 1/2 cup Greek yogurt
- 1/4 cup mayonnaise
- 2 tablespoons lime juice
- 1 teaspoon chili powder
- 1 teaspoon cumin
- Salt and pepper to taste
Instructions
- In a large bowl, combine the shredded chicken, black beans, corn, red bell pepper, cherry tomatoes, avocado, red onion, and cilantro. Toss gently to mix the ingredients.
- In a separate small bowl, whisk together the Greek yogurt, mayonnaise, lime juice, chili powder, cumin, salt, and pepper until smooth.
- Pour the dressing over the chicken mixture and stir until everything is well coated.
- Taste and adjust seasoning if necessary. If you prefer a spicier salad, add a pinch of cayenne pepper or some diced jalapeños.
- Chill the salad in the refrigerator for at least 30 minutes before serving to allow the flavors to meld.
- Serve on a bed of greens, in a wrap, or on its own.
Notes
- For a vegetarian option, replace the chicken with diced tofu or additional beans.
- Add a handful of crushed tortilla chips on top for extra crunch just before serving.
