Ingredients

  • 2 cups cooked chicken, shredded
  • 1 can (15 ounces) black beans, rinsed and drained
  • 1 cup corn, frozen or canned, drained
  • 1 red bell pepper, diced
  • 1 cup cherry tomatoes, halved
  • 1 avocado, diced
  • 1/4 cup red onion, finely chopped
  • 1/4 cup fresh cilantro, chopped
  • 1/2 cup Greek yogurt
  • 1/4 cup mayonnaise
  • 2 tablespoons lime juice
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine the shredded chicken, black beans, corn, red bell pepper, cherry tomatoes, avocado, red onion, and cilantro. Toss gently to mix the ingredients.
  2. In a separate small bowl, whisk together the Greek yogurt, mayonnaise, lime juice, chili powder, cumin, salt, and pepper until smooth.
  3. Pour the dressing over the chicken mixture and stir until everything is well coated.
  4. Taste and adjust seasoning if necessary. If you prefer a spicier salad, add a pinch of cayenne pepper or some diced jalapeños.
  5. Chill the salad in the refrigerator for at least 30 minutes before serving to allow the flavors to meld.
  6. Serve on a bed of greens, in a wrap, or on its own.

Notes

  • For a vegetarian option, replace the chicken with diced tofu or additional beans.
