  • 1/2 cup Buttermilk Can replace with milk plus a splash of vinegar or lemon juice

  • 1 teaspoon Vanilla Extract
  • 1 teaspoon Almond Extract Extra can be added for more almond taste
  • 1 cup Granulated Sugar Can substitute with stevia or other sweeteners
  • 2 cups All-Purpose Flour Use gluten-free flour for a gluten-free version
  • 2 teaspoons Baking Powder Ensure it’s fresh for best results

  • 1 cup Cherries Fresh or canned, drain canned cherries to avoid excess moisture
  • 1 tablespoon Cornstarch Can replace with all-purpose flour in a pinch
  • 1/2 cup Sliced Almonds Can use walnuts or pecans as a substitute
For the Glaze
  • 1 cup Confectioner's Sugar Can substitute with powdered erythritol
  • 2 tablespoons Cream Milk can be used as a lighter alternative

Method
 

Directions
  1. Preheat your oven to 350°F (177°C) and prepare an 8½-inch loaf pan with nonstick spray.
  2. In a mixing bowl, beat together the eggs, Greek yogurt, buttermilk, melted butter, almond extract, vanilla extract, and granulated sugar until well combined.
  3. In another bowl, whisk together the all-purpose flour, baking powder, and salt, then sift this mixture into the wet batter, stirring gently.
  4. Prepare the cherries by pitting and quartering them, coating in cornstarch, then fold them and sliced almonds into the batter.
  5. Pour the batter into the prepared loaf pan, sprinkle reserved cherries and almonds on top.
  6. Bake in the preheated oven for 50-60 minutes; check for doneness with a toothpick.
  7. Allow the bread to cool in the pan for 10-15 minutes before transferring to a wire rack.
  8. Whisk together confectioner's sugar, almond extract, and cream to make the glaze; drizzle over the cooled bread.
  9. Serve warm or at room temperature.
