  • 1 cup red cabbage shredded
  • 1 cup cucumber diced
  • 1/2 cup bell pepper diced
  • 1/4 cup green onions sliced
  • 1/4 cup cilantro chopped
  • 1/4 cup sesame seeds
  • 1/4 cup soy sauce
  • 2 tablespoons rice vinegar
  • 2 tablespoons sesame oil
  • 1 tablespoon honey or maple syrup
  • 1 teaspoon grated ginger
  • 1 clove garlic minced

Method
 

  1. In a large bowl, combine mixed greens, shredded carrots, red cabbage, cucumber, bell pepper, green onions, and cilantro.
  2. In a separate bowl, whisk together soy sauce, rice vinegar, sesame oil, honey (or maple syrup), grated ginger, and minced garlic to make the dressing.
  3. Pour the dressing over the salad and toss to combine.
  4. Sprinkle sesame seeds on top before serving.
  5. Serve immediately or refrigerate for up to an hour to let the flavors meld.
