Step-by-Step Instructions
  1. Preheat your oven to 325°F (163°C) and grease a 9x13-inch baking dish.
  2. Cut boneless skinless chicken breasts into bite-sized pieces and season them with salt and pepper.
  3. Coat seasoned chicken pieces in cornstarch, then dip them into beaten eggs.
  4. Heat vegetable oil in a skillet and fry coated chicken pieces in batches for 3-4 minutes until golden brown.
  5. Arrange the partially cooked chicken in the greased baking dish.
  6. Whisk together pineapple juice, brown sugar, low-sodium soy sauce, minced garlic, and cornstarch in a bowl.
  7. Pour the sauce evenly over the arranged chicken.
  8. Sprinkle red bell pepper and pineapple tidbits over the chicken and sauce.
  9. Bake uncovered for about 1 hour, stirring gently every 15 minutes.
  10. Let it stand for 5 minutes before serving.
