  • 1 cup pizza sauce
  • 4 English muffins split in half
  • 1 ½ cups shredded mozzarella cheese
  • 4 large eggs
  • ½ teaspoon garlic powder
  • ½ teaspoon Italian seasoning
  • Salt and pepper to taste
  • 1 cup cooked breakfast sausage or diced ham optional
  • Fresh basil or parsley for garnish optional

Method
 

  1. Preheat your oven to 375°F (190°C).
  2. Place the split English muffins on a baking sheet, cut side up.
  3. Spread about 2 tablespoons of pizza sauce on each muffin half.
  4. Sprinkle shredded mozzarella cheese evenly over the sauce on each muffin.
  5. In a bowl, whisk together the eggs, garlic powder, Italian seasoning, salt, and pepper.
  6. If using, add the cooked sausage or ham to the egg mixture and stir to combine.
  7. Pour the egg mixture evenly over the cheese on each muffin half.
  8. Bake in the preheated oven for 15-20 minutes, or until the eggs are set and the cheese is bubbly and golden.
  9. Remove from the oven and let cool for a few minutes. Garnish with fresh basil or parsley if desired.
