Ingredients
  

  • 1 package 6 English muffins, split in half
  • 1 cup pizza sauce
  • 1 ½ cups shredded mozzarella cheese
  • 6 large eggs
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 1 cup cooked and crumbled breakfast sausage optional
  • ¼ cup sliced green onions for garnish

Method
 

  1. Preheat your oven to 375°F (190°C).
  2. Place the split English muffins on a baking sheet, cut side up.
  3. Spread about 2 tablespoons of pizza sauce on each muffin half.
  4. Sprinkle shredded mozzarella cheese evenly over the sauce on each muffin.
  5. In a skillet, cook the eggs sunny-side up or scrambled, seasoned with Italian seasoning, salt, and pepper.
  6. Place one cooked egg on top of the cheese on each muffin half. If using sausage, add some crumbled sausage on top of the egg.
  7. Bake in the preheated oven for 10-12 minutes, or until the cheese is melted and bubbly.
  8. Remove from the oven and garnish with sliced green onions before serving.
