Step-by-Step Instructions for Cachapas
  1. In a blender, combine fresh corn, egg, milk, softened butter, cornflour, all-purpose flour, sugar, salt, and minced garlic. Blend until smooth and creamy, resembling thick pancake batter.
  2. Heat a nonstick skillet over medium heat for 2-3 minutes. Lightly coat with neutral oil.
  3. Using a ladle, pour batter onto the skillet, forming a circular shape about 4-6 inches in diameter.
  4. Cook for 2-3 minutes or until bubbles form on the surface. Flip carefully if using jalapeño slices.
  5. Flip and cook for an additional 2-3 minutes until golden brown on both sides.
  6. Once flipped, place a generous amount of mozzarella cheese on one half, fold over, and cook for 1-2 minutes until melted.
  7. Serve warm, ideally with sour cream.
