- Preheat your oven to 425°F (220°C) and place a 12-inch cast iron skillet inside to heat for about 10 minutes.
- In a large mixing bowl, whisk together the all-purpose flour, kosher salt, freshly ground black pepper, and 1/2 cup of the cheddar cheese.
- In a separate bowl, whisk together the large eggs, whole milk, fresh chives, and mustard powder until fully blended.
- Pour the wet ingredients into the dry ingredients, stirring gently to combine. Be careful not to overmix.
- Carefully remove the hot skillet from the oven, and add the unsalted butter, swirling until it melts completely.
- Pour the batter into the hot skillet, filling it no more than 3/4 full.
- Bake for 15 minutes, then sprinkle the remaining cheddar cheese over the top and return to the oven for an additional 10 minutes.
- Remove the skillet from the oven and let your Dutch Babies cool slightly. Serve warm with toppings.
