Step-by-Step Instructions
  1. Preheat your oven to 425°F (220°C) and place a 12-inch cast iron skillet inside to heat for about 10 minutes.
  2. In a large mixing bowl, whisk together the all-purpose flour, kosher salt, freshly ground black pepper, and 1/2 cup of the cheddar cheese.
  3. In a separate bowl, whisk together the large eggs, whole milk, fresh chives, and mustard powder until fully blended.
  4. Pour the wet ingredients into the dry ingredients, stirring gently to combine. Be careful not to overmix.
  5. Carefully remove the hot skillet from the oven, and add the unsalted butter, swirling until it melts completely.
  6. Pour the batter into the hot skillet, filling it no more than 3/4 full.
  7. Bake for 15 minutes, then sprinkle the remaining cheddar cheese over the top and return to the oven for an additional 10 minutes.
  8. Remove the skillet from the oven and let your Dutch Babies cool slightly. Serve warm with toppings.
