Method
 

Step-by-Step Instructions
  1. Preheat the oven to 400°F (200°C) and grease a 9x13 casserole dish.
  2. Layer 8 corn tortillas across the bottom of the greased dish, cover with 1 cup salsa, half the black beans, and a third of the cheese blend.
  3. Repeat by adding another 8 tortillas, remaining black beans, a third of the cheese, and another cup of salsa.
  4. Top with remaining tortillas, spread final cup of salsa, and create shallow holes for the eggs.
  5. Crack an egg into each hole, being careful not to break the yolks.
  6. Bake for 25-30 minutes until egg whites are set but yolks are slightly runny.
  7. Allow to cool slightly and garnish with cilantro, green onions, and avocado before serving.
