Lay out the flour tortillas on a clean surface. Spread an equal amount of the chicken mixture onto the center of each tortilla.
Top the chicken mixture with fresh spinach leaves and chopped green onions.
Fold in the sides of each tortilla and then roll it up tightly from the bottom to the top, creating a wrap.
Heat the olive oil in a large skillet over medium heat. Place the wraps seam-side down in the skillet and cook for 3-4 minutes on each side, or until golden brown and crispy.
Remove the wraps from the skillet and let them cool for a minute before slicing them in half. Serve warm.
