Slice the croissants in half horizontally.
In a mixing bowl, combine the shredded chicken, chopped romaine lettuce, Caesar dressing, and grated Parmesan cheese. Season with salt and pepper to taste.
Spoon the chicken mixture evenly onto the bottom halves of the croissants.
Place the top halves of the croissants on the sandwiches.
Arrange the sandwiches on a baking sheet and bake in the preheated oven for about 5-7 minutes, or until the croissants are warm and slightly crispy.
Remove from the oven, drizzle with additional Caesar dressing if desired, and serve immediately.
