Ingredients
  

  • 1 ½ cups all-purpose flour
  • ½ cup granulated sugar
  • ½ cup unsalted butter softened
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • 1 large egg
  • 1 teaspoon ground cinnamon
  • 8 ounces cream cheese softened
  • ½ cup powdered sugar
  • 1 large egg
  • ¼ cup granulated sugar for topping
  • 1 teaspoon ground cinnamon for topping
  • 1 tablespoon unsalted butter melted (for topping)

Method
 

  1. Preheat your oven to 350°F (175°C) and grease an 8x8-inch baking pan.
  2. In a large bowl, mix together the flour, granulated sugar, softened butter, vanilla extract, baking powder, salt, and egg until a dough forms.
  3. Press half of the dough into the bottom of the prepared baking pan to create a crust.
  4. In another bowl, beat the softened cream cheese until smooth. Add the powdered sugar, vanilla extract, and egg, mixing until well combined.
  5. Spread the cheesecake mixture evenly over the crust in the baking pan.
  6. Crumble the remaining dough over the cheesecake layer.
  7. In a small bowl, combine the granulated sugar and ground cinnamon, then sprinkle this mixture over the top of the crumbled dough.
  8. Bake for 30-35 minutes or until the top is golden brown and the cheesecake is set.
  9. Allow to cool in the pan for at least 30 minutes before cutting into bars. For best results, chill in the refrigerator for 1-2 hours before serving.
