Ingredients
  

  • 1 cup granulated sugar
  • 1 tablespoon ground cinnamon
  • 4 large eggs
  • 1 cup milk
  • 1 teaspoon vanilla extract
  • 8 slices of bread white or whole wheat
  • 4 tablespoons unsalted butter
  • 1 cup cream cheese softened
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract for filling
  • Maple syrup for serving

Method
 

  1. In a small bowl, mix together the granulated sugar and ground cinnamon. Set aside.
  2. In a separate bowl, whisk together the eggs, milk, and 1 teaspoon of vanilla extract until well combined.
  3. Trim the crusts off each slice of bread and gently flatten the slices with a rolling pin.
  4. In another bowl, mix the softened cream cheese, powdered sugar, and 1 teaspoon of vanilla extract until smooth.
  5. Spread about 1 tablespoon of the cream cheese mixture onto each slice of flattened bread. Roll each slice tightly from one end to the other.
  6. Heat a large skillet over medium heat and melt 1 tablespoon of butter.
  7. Dip each rolled-up bread slice into the egg mixture, ensuring it is well coated.
  8. Place the coated roll-ups seam side down in the skillet and cook for 2-3 minutes on each side, or until golden brown.
  9. Once cooked, roll each French toast roll-up in the cinnamon sugar mixture until fully coated.
  10. Serve warm with maple syrup drizzled on top.
