In a medium mixing bowl, combine the Greek yogurt, almond butter, honey (or maple syrup), and vanilla extract. Mix until smooth and well combined.
Add the rolled oats, mini chocolate chips, and salt to the yogurt mixture. Stir until all ingredients are evenly incorporated.
Using a tablespoon, scoop the mixture and roll it into small balls. Place the bites on a parchment-lined baking sheet.
Once all the dough is shaped, place the baking sheet in the freezer for about 30 minutes to firm up the bites.
After chilling, transfer the bites to an airtight container and store them in the refrigerator for up to one week or in the freezer for longer storage.
