Method
 

  1. In a mixing bowl, combine the cottage cheese and egg. Whisk until well blended.
  2. In a separate bowl, mix the flour, baking powder, salt, garlic powder, and dried herbs.
  3. Gradually add the dry ingredients to the cottage cheese mixture, stirring until a dough forms.
  4. Lightly flour a clean surface and knead the dough for about 2 minutes until smooth.
  5. Divide the dough into 4 equal pieces and roll each piece into a flat round shape, about 1/4 inch thick.
  6. Heat a non-stick skillet over medium heat. Cook each flatbread for 2-3 minutes on each side, or until golden brown and cooked through.
  7. Remove from the skillet and brush with olive oil if desired. Serve warm.
