  • 1 cup Cottage Cheese
  • 1 large Egg
  • 2 tablespoons Green Onions chopped
  • 2 tablespoons Parsley optional

  • 0.5 teaspoon Salt to taste
  • 0.5 teaspoon Black Pepper to taste
  • 0.5 cup Panko Breadcrumbs
  • 2 tablespoons Olive Oil for frying

Method
 

Step-by-Step Instructions
  1. In a medium mixing bowl, combine one can of drained tuna and one cup of cottage cheese using a fork. Mix until creamy.
  2. Add in one egg, chopped green onions, optional parsley, garlic powder, salt, and black pepper. Stir well.
  3. Gently fold in half a cup of panko breadcrumbs to the mixture.
  4. With your hands, form the mixture into equal-sized patties, about 2½ inches wide and ¾ inch thick.
  5. Heat 2 tablespoons of olive oil in a large skillet over medium heat for about 2 minutes.
  6. Place the patties into the hot skillet, cooking for 3–4 minutes on each side until golden brown.
  7. Once cooked, let the cakes rest for a minute before serving warm with your favorite sauce.
