- In a medium mixing bowl, combine one can of drained tuna and one cup of cottage cheese using a fork. Mix until creamy.
- Add in one egg, chopped green onions, optional parsley, garlic powder, salt, and black pepper. Stir well.
- Gently fold in half a cup of panko breadcrumbs to the mixture.
- With your hands, form the mixture into equal-sized patties, about 2½ inches wide and ¾ inch thick.
- Heat 2 tablespoons of olive oil in a large skillet over medium heat for about 2 minutes.
- Place the patties into the hot skillet, cooking for 3–4 minutes on each side until golden brown.
- Once cooked, let the cakes rest for a minute before serving warm with your favorite sauce.
