  • 2 cups frozen sweet corn thawed
  • 1 cup cherry tomatoes halved
  • 1 cup diced cucumber
  • 1/2 cup red onion finely chopped
  • 1/2 cup mayonnaise
  • 1/4 cup sour cream
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon sugar
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 1/2 cup crumbled bacon optional
  • 1/4 cup chopped fresh cilantro or parsley for garnish

Method
 

  1. In a large mixing bowl, combine the thawed corn, cherry tomatoes, cucumber, and red onion.
  2. In a separate bowl, whisk together the mayonnaise, sour cream, apple cider vinegar, sugar, garlic powder, onion powder, salt, and pepper until smooth.
  3. Pour the dressing over the corn mixture and stir gently until everything is well coated.
  4. If using, fold in the crumbled bacon for added flavor and texture.
  5. Cover the salad and refrigerate for at least 30 minutes to allow the flavors to meld.
  6. Before serving, give the salad a good stir and garnish with chopped cilantro or parsley.
