Ingredients
  

  • 3 cups cooked chicken shredded
  • 1 cup mayonnaise
  • 1/2 cup BBQ sauce
  • 1/4 cup plain Greek yogurt
  • 1/2 cup celery diced
  • 1/4 cup red onion finely chopped
  • 1/2 cup corn drained (canned or frozen)
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper to taste
  • 1 cup shredded cheddar cheese optional
  • 1/4 cup fresh cilantro chopped (optional)

Method
 

  1. In a large mixing bowl, combine the shredded chicken, mayonnaise, BBQ sauce, and Greek yogurt. Mix until well combined.
  2. Add the diced celery, red onion, corn, garlic powder, onion powder, salt, and pepper. Stir until all ingredients are evenly mixed.
  3. If using, fold in the shredded cheddar cheese and chopped cilantro for added flavor.
  4. Cover the bowl and refrigerate for at least 30 minutes to allow the flavors to meld.
  5. Serve the salad on a bed of greens, in a sandwich, or in a wrap.
