Ingredients
  

  • 1 pound fresh salmon fillet skin removed and cut into bite-sized pieces
  • 1 cup panko breadcrumbs
  • 1/2 cup all-purpose flour
  • 2 large eggs
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup mayonnaise
  • 2 tablespoons sweet chili sauce
  • 1 tablespoon sriracha adjust for spice preference
  • Vegetable oil for frying

Method
 

  1. In a shallow bowl, mix the flour, garlic powder, paprika, salt, and black pepper.
  2. In another bowl, beat the eggs.
  3. Place the panko breadcrumbs in a third bowl.
  4. Dip each salmon piece first into the flour mixture, then into the beaten eggs, and finally coat with panko breadcrumbs. Set aside on a plate.
  5. In a large skillet, heat about 1/4 inch of vegetable oil over medium-high heat.
  6. Once the oil is hot, carefully add the salmon bites in batches, ensuring not to overcrowd the pan.
  7. Fry for about 3-4 minutes on each side or until golden brown and crispy. Remove and drain on paper towels.
  8. In a small bowl, mix together the mayonnaise, sweet chili sauce, and sriracha to create the bang bang sauce.
  9. Serve the crispy salmon bites hot with the bang bang sauce for dipping.
