Lay the flour tortillas flat on a clean surface.
Evenly distribute the chicken mixture onto the center of each tortilla.
Top the chicken mixture with shredded lettuce, diced tomatoes, and shredded cheddar cheese.
Fold the sides of the tortilla inwards, then roll from the bottom up to form a wrap.
(Optional) Heat olive oil in a skillet over medium heat. Place the wraps seam-side down in the skillet and cook for 2-3 minutes on each side until golden brown and crispy.
