Ingredients
  

  • 2 boneless skinless chicken breasts (about 1 pound)
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 6 cups romaine lettuce chopped
  • 1 cup cherry tomatoes halved
  • ½ cup Caesar dressing
  • ½ cup grated Parmesan cheese
  • 1 cup croutons
  • Fresh parsley chopped (for garnish)

Method
 

  1. Preheat your grill or stovetop grill pan over medium-high heat. Season the chicken breasts with garlic powder, paprika, salt, and pepper.
  2. Drizzle the olive oil over the chicken breasts and place them on the grill. Cook for about 6-7 minutes on each side, or until the internal temperature reaches 165°F. Remove from heat and let rest for 5 minutes before slicing.
  3. In a large bowl, combine the chopped romaine lettuce and cherry tomatoes. Drizzle with Caesar dressing and toss until evenly coated.
  4. Slice the grilled chicken and place it on top of the salad. Sprinkle with grated Parmesan cheese and croutons.
  5. Garnish with chopped parsley before serving.
