  • 1 pound Ground Chicken
  • 2 cups Zucchini Grated and squeezed
  • 2 large Eggs
  • 1/2 cup Cheese Optional, can use dairy-free alternatives
  • 2 cloves Minced Garlic Fresh
  • 1 teaspoon Salt
  • 1 teaspoon Pepper
  • 1/4 cup Chopped Parsley Optional
  • 1/2 cup Almond Flour Or breadcrumbs

Method
 

Cooking Instructions
  1. Grate the zucchini and squeeze out excess moisture using a kitchen towel.
  2. Combine ground chicken, zucchini, eggs, cheese, garlic, salt, pepper, and parsley in a large bowl.
  3. Adjust consistency with almond flour or breadcrumbs if the mixture feels too wet.
  4. Shape the mixture into patties about 2-3 tablespoons each.
  5. Heat olive oil in a skillet over medium heat until shimmering.
  6. Cook fritters for 4-5 minutes on each side until golden brown.
  7. Drain cooked fritters on a paper towel-lined plate and let cool slightly before serving.
